Pecan Pie Cheesecake – rich, creamy, and sinfully decadent cheesecake loaded with pecan and syrup. Absolutely amazing cheesecake that everyone wants more.
Ingredients
Crust Ingredients:
- 1 3/4 cups 260 g vanilla wafer crumbs
- 1/4 cup 45 g dark brown sugar, firmly packed
- 1/3 cup 80 g unsalted butter, melted
Pecan Filling Ingredients:
- 1 cup 200 g granulated sugar
- 2/3 cup 160 mL dark corn syrup
- 1/3 cup 80 g unsalted butter, melted
- 2 large eggs
- 1 1/2 cups 225 g pecans, chopped
- 1 teaspoon 5 mL vanilla extract
Cheesecake Ingredients:
- 3 8-ounce packages (690 g) cream cheese, softened
- 1 1/4 cups 225 g dark brown sugar, firmly packed
- 2 tablespoons 15 g all-purpose flour
- 4 large eggs
- 2/3 cup 160 mL heavy whipping cream
- 1 teaspoon 5 mL vanilla extract

Preheat the oven to 350 degrees F.

Combine vanilla wafer crumbs and brown sugar in a medium bowl. Stir in the melted butter with a spatula. Press the mixture into the bottom and halfway up the sides of a 9-inch springform pan. Bake for 6 minutes and let cool.

Combine all the pecan filling ingredients in a medium saucepan. Stir well and bring to a boil over medium-high heat. Reduce the heat to maintain a simmer and cook, stirring continuously, until the mixture thickens, about 8 to 10 minutes. Pour into prepared crust.
