Spicy Cajun Chicken Skewers

Ingredients:

Spicy Cajun Seasoning Mix

  • 2 tbsp Salt
  • 1 tbsp Coarse Black Pepper
  • 1 tbsp Sugar
  • 2 tbsp Paprika
  • 2 tbsp Cayenne Pepper
  • 2 tbsp Garlic Powder
  • 1 tbsp Dried Oregano
  • 1 tbsp Dried Basil
  • 1 tbsp Dried Thyme
  • 1 tbsp Crushed Red Peppers
  • 1 tbsp Chili Powder

Spicy Cajun Chicken Marinade

  • 1/4 cup Spicy Cajun Seasoning Mix
  • 1/4 cup Olive oil
  • 1/4 cup Water

Spicy Cajun Chicken Skewers

  • 12 pcs Wooden skewers
  • 4 pcs Chicken breasts cubed
  • 1 cup Steamed white rice as side

Instructions:

  1. Add all spices in a small bowl and mix well.
  2. For the marinade, add all ingredients into a plastic resealable bag, massage well and marinate for at least 1 hour.
  3. Build the skewers by adding chicken and veggies on the wooden skewers. Cook on a hot skillet for about 20 minutes turning often to avoid charring and burning.
  4. Serve with your favorite sides. In this example, I used steamed rice and veggies.
