Mexican Style Barbacoa Chicken Meal Prep

Ingredients:

Seasoning Mix

  • 2 tbsp Salt
  • 2 tbsp Black Pepper
  • .5 tbsp Ground Cloves
  • 2 tbsp Smoked Paprika
  • 1 tbsp Cinnamon
  • 1 tbsp Cumin
  • 1 tbsp Coriander ground or dried
  • 1 tbsp Ground Ginger

Marinade

  • 1/4 cup Mexican Style Barbacoa Chicken Seasoning
  • 1/4 cup Olive Oil
  • 1/4 cup Water or Beer

Recipe

  • 6 Chicken Thighs
  • 1 cup Mexican Rice

Instructions:

  1. Mix all spices to create the seasoning.
  2. In a zip lock bag, add chicken, seasoning, olive oil and water. Massage well and marinate for at least 1 hour.
  3. In a baking pan, space out chicken and bake for 40 minutes at 375° F.
  4. Serve with your favorite sides! Enjoy!
