5. Turkey Meatball Vegetable Soup
Ingredients
For The Turkey Meatballs:
- 2 lbs ground turkey
- 1 cup bread crumbs
- 2 eggs
- dash of milk
- salt/pepper
- Italian seasoning
For The Soup:
- 2 cartons of chicken broth
- Sliced onions (or diced)
- Mushrooms
- 1 container of Gnocchi
- 2 handfuls of rinsed Spinach
Instructions
- Preheat oven to 375 F. Mix all the ingredients together with your hands, making sure to add a little more milk if it looks dry or a little more breadcrumbs if it looks too wet. Scoop out small meatballs and line them out on two cookie trays. Bake for 25 minutes.
- When the meatballs are cooking, sauté the onions until they are a golden color. Then add the mushrooms and cook until done. Add the spinach. Cook for a few minutes.
- Add in the broth. Then add the meatballs. Let simmer for 20 minutes or longer, adjusting the flavor as needed with salt and pepper. Add in the gnocchi for the last 10 minutes. When the gnocchi rises to the top, it is done and ready to be served.
Tips
