Greek Chicken Lettuce Wraps with Tzatziki

Ingredients:

Greek Chicken:

  • 1.5 lbs. boneless skinless chicken breast, cut into 1″ cubes
  • 1 tablespoon lemon juice
  • 1 teaspoon oregano
  • 1 teaspoon parsley
  • 1 teaspoon garlic powder
  • salt & pepper to season
  • 1 tablespoon grape seed oil

Tzatziki Sauce:

  • ½ cup plain greek yogurt
  • ¼ cup grated cucumber
  • 1 tablespoon lemon juice
  • ½ teaspoon dry dill
  • ½ teaspoon garlic powder
  • salt to taste

Toppings:

  • 1/2 cup halved cherry tomatoes
  • 3/4 cup sliced cucumber
  • 1/3 cup thinly sliced red onion
  • 12 lettuce cups

Instructions:

    1. To a large bowl add chicken breast, lemon juice, oregano, parsley, garlic powder, salt and pepper. Using a spoon toss all the ingredients together until the chicken is coated.
    2. Heat a large skillet to medium high heat. Add in grape seed oil and then the seasoned chicken breast. Cook chicken for 2-4 minutes per side until they are no longer pink. Remove from skillet and let rest.
    3. In the meantime, to a small bowl add greek yogurt, cucumber, lemon juice, dill, garlic powder, and salt to taste. Using a spoon mix everything together. Set aside.
    4. Assemble the Lettuce Wraps: to one lettuce cup add 3-4 cubes of chicken, tomatoes, cucumber, red onion and a dollop of tzatziki. Repeat process.
    5. Serve!
